Pesto

Ingredients
  • 1 cup packed, or a good handful of fresh arugula, spinach, basil (mixed is awesome!)
  • 1-2 fresh garlic cloves
  • 1/4 cup sunflower seeds or chopped walnuts, or pumpkin seeds
  • 2 tbsp fresh squeezed lemon juice
  • 4 tbsp generous Tbs of grated parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 1/4 cup cup of water (for a runnier pesto…omit if you want a spreadable pesto)
  • 1 tbsp sea salt
  • 1 pinch of black pepper.
Instructions
  1. Put everything in a food processor or blender except the olive oil and water (if using)
  2. Turn on the blender and slowly pour in the olive oil through the top. If not blending well, stop the blender and give the inside a stir, add a bit more olive oil and a bit of water. Turn on again, and it should mix up nicely.
Recipe Notes

Use on pizzas, pastas, sandwiches, dip cooked chicken into it and eat. Yum!
